Fire Cider Goes to Court: Fighting for Folk Herbalism

The Federal Courthouse in Springfield, Massachusetts is a large modern building with an entire edifice of glass facing the street. With its ‰ÛÏcascading concave roof gracefully framing the space in a delicate shell of steel and glass,‰Û the courthouse is an imposing sight. But even more impressive than this wall of steel and glass are the two ancient trees that the courthouse was obviously built to accommodate. The glass walls literally curve around a huge old copper beech that looks like it’s been standing there for centuries and the largest Tillia europa, or linden tree, that I’ve ever seen. It’s apparent that the architects took these trees into account when planning and building this courthouse. I later learned that indeed, the designers felt that ‰ÛÏtheir presence was too powerful to ignore,‰Û and the preservation of these trees ‰ÛÏwas a key element in the design proposal that emerged‰Û for the courthouse. As a born-and-raised Oregonian, I tend to crave the summer sun. Skin has its limits, however, and after venturing out on or around water on a sunny day, I find that my largest organ needs as much R&R as I do! Like many folks, I’m a big fan of aloe vera gel, but it can get messy and goopy to use on its own. Fortunately, by combining the generous cooling benefits of aloe vera with wonderful witch hazel extract and skin-loving calendula hydrosol (a mild plant water created during the essential oil distilling process), you can create a non-goopy recipe that is physically refreshing, easy to use, and makes for a comforting end to a long day in the outdoors.

One of my first experiences with turmeric masks was at a relative’s wedding many years ago. It was the night before the big event, and the bride’s house was buzzing with excitement! Both my husband and I love to cook, and we delight in sharing our gastronomic adventures with those we love. Having grown up in a culturally diverse area of the country, I was incredibly lucky to be exposed to many different beliefs, forms of art, and my favorite cultural expressionÑfood! I spent many of my formative years with friends whose family origins spanned the globe. One of my closest friends during these years was Middle Eastern, and having spent so much time and so many meals with his family, I developed a real taste for their cuisine. Lucky for me, they enjoyed my help preparing meals and even made me an honorary Armenian for my ability to roll ‰ÛÏchoreg‰Û with the best of them. Althaea officinalis, or marshmallow, is one of my favorite herbs. I love to grow this ancient botanical in my garden because it’s a stunning plant with a fantastic history. People have long viewed marshmallow as a food as well as a gentle remedy, because it is both pleasantly edible and a demulcent. When it’s growing in your garden, you can cook the young stalks and leaves just like any other pot herb or green; they’re wonderful in a salad, you can boil them or fry them, and they disappear into smoothies!

I like to keep my routine simple when it comes to skin care, and single body oils have always been my personal favorite for moisturizing in the morning or at night. Because we all have slightly different skin types and reactions, a little trial and error is necessary to determine which oils are best for each individual. By becoming familiar with the different properties of particular oils, you can save yourself a lot of time (and avoid having to experiment endlessly!). Vegan Tom Kha Soup Recipe from Scratch

I probably say this about food far too often, but tom kha is easily one of my favorite dishes. It has the perfect balance of sweet, salty, and sour. The backbone of this flavor comes from the Thai food holy trinity: galangal root, lemongrass, and Thai lime leaves. Back in my early twenties, all I knew of Thai food was arguably the cuisine’s most famous dish, Pad Thai. When my friend suggested I branch out and try this incredible soup instead, I was skeptical, but took the advice anyway. I am so glad I did! Now it’s in regular rotation in my household meal plan, and my daughter gets to benefit from that fateful day I decided to expand my palate. (more…)

Homemade Hawthorn Berry Elixir for Heart Health

When October rolls around each year, I start paying attention to the hawthorn berries ripening on the tree in my front yard. Once they’re ready, I harvest them to make my annual winter solstice hawthorn elixir to give to friends and family. Hawthorn is known to support cardiovascular health*. Our farm liaisons travel to America’s northernmost state to visit the revolutionary farmers working to cultivate organic rhodiola in Alaska’s rugged landscape.

Arriving at a property that looks across the water to Kachemak Bay State Park, we have our first rendezvous with a group of farmers engaged in a bold agricultural experiment: cultivating organic Rhodiola rosea in the rugged Alaskan countryside. These folks have staked years of work on the hope that this much-prized adaptogen hailing from Siberia and northern Asia can thrive in the challenging agricultural conditions of their wild home state. For us, it has already been a long day of travel that’s left us more than ready to cozy up with some hot tea and take in the incredible views. Nothing gets me ready for winter quite like a batch of homemade fire cider. But the typically long fermentation duration has kept me from having this tonic when I need it most. For those who are short on time and fresh horseradish, this recipe is for you! I actually discovered that you can make a fire cider that has the same kick as the traditional recipe in half the time and with dried horseradish. In fact, it can still be a power-packed remedy without any fresh ingredients at all!

Soothing Wild Cherry Bark Syrup Recipe for a Dry Throat

When I was growing up in the mountains, my father gave me two ‰ÛÏwinter tips‰Û that were passed down to him from his parents and grandparents. First, keep a pot of water on the wood stove as a sort of rustic humidifier to moisten the dry air that happens in homes shut up tight against the winter cold. This helped avoid the dry mucous membranes and throats that would otherwise plague us. And second, keep a jar of raw, local honey in the cupboard at all times, as this beautiful gift from the bees does wonders to soothe an irritated throat. With the cold weather now upon us here in western Oregon, I’m reminded of that steaming pot of water, stoking the fire against chilly nights, and Papa handing me a spoonful of honey before I brushed my teeth for bed.

Homemade Vegan Pho Recipe with Mushrooms

In my late teens, I was bitten by a travel bug from which I’ve yet to fully recover. I spent my young adulthood on-the-move, visiting and living in a variety of settings both urban and rural, across the U.S. and abroad. Along the way, I learned, grewÑand ate! I found that delving into different cuisines offered an accessible, informative, and visceral opening through which to explore new cultures in general. No place I’ve ever lived has provided more culinary cultural windows than the intensely diverse city of Chicago, where, after a long ride north on the CTA Red Line, I first encountered ph‡ÈÙ. After just a few noodly slurps of this fabulous dish, I found myself flushed, near tears, and tingling from head to toeÑin short, I was in love.

Outdoorsy athletes can be a funny lot. We claim to value nothing more than immersing ourselves in the natural world, yet some of the snacks we use to fuel these adventures are many, many steps removed from anything that grows from the earth. Lots of popular power bars and energy gels contain an unsettling amount of processed sugars and synthetic preservatives, and the individually wrapped servings generally end up in a landfill (that is, if they don’t escape from your pocket and out onto the trail). For these reasons, I’ve been working on finding my own homemade alternatives to power my activities, finding success with some DIY energy bars and now this energy gel recipe from Four Sigmatic.

Lip balm is about as much of a staple in my life as water. While some might say that I’m addicted to it, I like to think I’m a connoisseur. According to legend, the concoction was created by a group of four thieves and grave robbers to protect themselves from contracting the plague while robbing the bodies of the ill and deceased. When apprehended, the thieves admitted to using the formula and disclosed the recipe in order to receive a less severe punishment for their crimes.

Harry Potter and Game of Thrones, mead is experiencing a renaissance. For years, this delicious golden nectar has been saddled with a reputation of being overly sweet, or only to be enjoyed while at a medieval festival or dinner. But no longer! Mead has retaken a seat at the craft beverage table with many metheglins (spiced meads) and fruited meads leading the way. I’ve enjoyed meads with traditional culinary herbs including saffron, cacao nibs, vanilla, ginger, chilies, and cinnamon, as well as more traditional brewing herbs such as mugwort, yarrow, juniper berries, and hops.

How to Make ‰ÛÏPeppernut‰Û German Spice Cookies at Home

I fell in love with Pfeffernusse cookies at my first real job at a German Deli in Atlanta while in my freshman year of high school. We sold them only during the holiday season, but I would crave them year-round. I loved the warmth from the spices and the firm, chewy texture. I tried a few recipes that I found over the years and was never quite satisfied with the outcome, so I made some adjustments and tweaks in my little kitchen ‰ÛÏworkshop‰Û and finally came up with a recipe that has all the right notes. I was also happy to find out that by adding a little extra ginger and chilling overnight, this dough is perfect for creating cut-out gingerbread cookies to decorate!

I recently attended the New England Women’s Herbal Conference and was struck by the sense of welcome and togetherness that was present throughout the entire event. There was much focus on inclusion and creating space for one another, and I felt compelled to share that spirit beyond the bounds of the conference. I was inspired to help bring more awareness to the strength of the herbal community and how people can be more involved in putting it to good use. Herbalists come in all genders, shapes, sizes, ethnicities, education levels, and from all geographic locations and backgrounds, and we all have something to share with each other.

Ever since I joined the Mountain Rose Herbs team, I’ve been dabbling in making my own body care products (and loving it!). DIY goodies are easier to make than you might think, and they’re completely customizable to your unique needs and aroma preferences. With the abundance of beautiful and healthful botanicals available in my workplace, it didn’t take long for little jars of homemade body butter to start appearing on my desk, office shelves, and nearby countertops. I find body butter to be a wonderful everyday moisturizer for my (often dry) Mediterranean skin.

Food preservation has been around for thousands of years. From drying acorns for extended storage to turning grapes into wine, the act of preservation has allowed people around the globe to enjoy various foods and botanicals well past their harvest season. As a chef and homesteader, I often find myself having way more fresh ingredients than I can use before they turn. This is where food preservation comes into play! I do my best to appropriately utilize as much as I can so that my family may enjoy the spring, summer, and autumn harvest well into the cold winters of Maine. Extra cabbage gets salt and turns to sauerkraut, excess peaches get pureed and dehydrated into fruit leather, and the list goes on. Over the years, I have become particularly fond of vinegar and its acidic properties to capture the essence, flavor, and minerals naturally found in fruits and herbs.

Over the last decade, my kitchen has hosted a wide variety of cultures and home fermentation projects. Pickles, sauerkraut, kimchi, milk-and-water kefir, and fermented garlic paste have all lived (and thrived!) atop my counters. However, only one culture has found a permanent residence: kombucha. If you aren’t familiar with kombucha, it is a fermented tea beverage that has exploded in popularity over the last few years. Kombucha can now be easily found at nearly every co-op or grocery store, but if you drink as much as I do, store-bought bottles can get pricey fast. Reishi Mushroom Chai Recipe for Immune Support

 

Each October, I get to set up the Mountain Rose Herbs booth at the wonderful Mount Pisgah Arboretum Mushroom Festival here in Eugene, Oregon. I absolutely love this event! It typically brings out 3,000 mycophiles eager to learn about wild mushrooms and peruse the many species on display. Aiming to be festive with fungus, I’ll usually brew up a large batch of reishi chai. Chai is one of my all-time favorite teas, and adding reishi mushroom slices (Ganoderma lucidum) gives it the added perk of supporting immune health*.

Herb-Infused Kokum Butter Salve for Dry Skin

My recent discovery of kokum butter set me ablaze in the kitchen! Happily experimenting with various ways to use it, I’ve concluded that it is perfect for dry skin.

If you’ve never used kokum butter, it’s similar in firmness to cocoa butter, but a little flakier. Many consider it a good substitute for cocoa butter because of its uniform triglyceride composition. It can be used to thicken many homemade cosmetics including body butters, creams, lotions, and lip balms.

Homemade Organic Baby Food Recipes with Herbs & Spices

Recently, my husband and I were taking a training class with our puppy, Gracie Cakes. The dog trainer suggested that we class attendees head to the grocery store and buy jars of baby food as training treats for the dogs Ñ apparently, dogs love the common pureed ingredients used in commercial baby foods. I say this to explain how I found myself standing in a baby food aisle for the very first time in my life. I realized, as I stood there not knowing where to even begin, that I had
raised three babies to healthy adulthood and, until Gracie Cakes the terrier, had done so without ever twisting the lid from a commercial baby food jar.

As we cycle into summer, I am feeling the drive to accomplish more tasks on my ever-growing to-do list. Unfortunately, this creation motivation sometimes results in my waking up with some seriously sleepy eyes! I found myself wanting a nice skin cream full of natural ingredients that would be cooling and kind to the delicate under-eye area. Being a DIY-minded person, I set out to formulate one.

I absolutely love our organic sage hydrosol! This delightful aromatic is water-steam distilled from fresh culinary sage. It is uplifting, energetic, and grounding Ñ all at the same time! It smells a lot like fresh sage leaves and is primarily made up of 1,8-cineole and camphor.

Considered a balancing astringent, organic sage hydrosol makes an excellent base for deodorant sprays and facial toners. It can be used as a single ingredient spray or blended with citrus notes, other culinary spice notes, or herby green notes.

When it comes to surviving Oregon’s notoriously dark and damp winters, mornings definitely find me protectively clinging to a steaming mug of full-bodied, locally-roasted coffee. But when warm weather rolls around, my solar-powered self craves something cooler (and less high-octane) to provide a light boost to my day. I’ve found a number of traditional and herbal iced tea recipes that often fit the bill, but when I really want to treat myself, I take the time to whip up a special treat: a chilled organic matcha tea latte.

My first taste of green tea ice cream was after a feast at a Japanese restaurant. Although I was stuffed to the brim, the waiter convinced me to be adventurous and try a scoop. I thought there was no room left in my stomach, but then I tasted a bite, devoured that scoop, and thought about ordering another! The grassy, floral, and fruity notes paired perfectly with a creamy sweetness and a touch of vanilla. I skipped the second scoop and spent the drive home thinking about how to make my own.

As herbs begin to emerge from the garden boxes that we built last summer, and the lavender we started from seed two years ago sends out fragrant new leaves and flowers, our bees become visible once more, busying themselves among our homestead’s first brilliant blooms. Reminders of life-renewed spring forth everywhere I look, from the returning plants and flowers, to the bees buzzing from blossom to blossom, to my own little “gardening companion”, my cat Theo, who playfully rolls around near me as I carefully transplant vegetable starts into the freshly tilled soil. Our chickens seem to enjoy these brighter days as well, leisurely sunbathing and picking at fresh grass outside of their coop. I savor every beautiful sight, sound, and aroma that surrounds me at this most exciting time of the year Ñ there truly is no greater time than summer in the Willamette Valley!

People who have never homebrewed always ask me why I bother, citing the plethora of amazing craft beer choices available today. While there are a lot of great independent breweries making beers that I adore, nothing beats savoring a glass beer I brewed myself. Plus, homebrewing my own beer ensures I’ll always have access to my favorite styles brewed just the way I like them. Some of my favorite herbal additions include grains of paradise or smoked peppercorns in rustic saison, a big floral pop of chamomile in a Belgian witbier, or adding a kick to a rich stout with bird’s eye chilies and cacao nibs.

Matcha is an alluring powdered green tea with deep historical roots in Japanese tea ceremonies. Like all true teas, matcha is produced from the tender young leaves of the Camellia sinensis plant. The way in which the leaves are grown and processed is what sets matcha apart from other green teas. All matcha is shade-grown, hand-harvested, and quickly steamed. After steaming, the stems and veins are removed from each leaf, and the leaves are then left to dry flat before being stone-ground into a fine powder. Ever since my husband became vegan, I’ve been re-crafting my mother’s recipes, including her scrumptious
organic coconut macaroons. My family doesn’t actually have much of a sweet tooth, so when I remove the dairy from recipes, I like to cut down on sugar as well. These egg-free and dairy-free cookies are made with unsweetened, finely-milled organic coconut flakes. In my experience as a macaroon maker, I’ve found that smaller coconut flakes help minimize the amount of flour needed and maximize the amount of delicious coconut flavor. They’re perfect for any occasion!

After a questionable restaurant meal or a heavy dinner, my mom is always the first to say, ‰ÛÏBetter take your triphala!‰Û And for good reason too. This Ayurvedic herb is one of the most famous, multi-use herbs for general wellness and maintaining healthy digestion. Because of this, even guests who stay at our house are not spared the suggestion to give triphala a try. Although it’s an acquired taste, I’m proud to say that I buy it by the pound and have benefited from its gentle herbal support over the years.

Stinging Nettle Pesto Recipe

I spent my childhood in Iowa trying to avoid the nettle’s sting. This bright green plant was plentiful on the land adjacent to the farm ponds and creek beds there. I had no idea this ‰ÛÏweed‰Û was something so desirable until I visited my local farmers market as an adult living in Oregon, where it goes for $16 a pound! Once I learned how easy it was to identify and harvest in the nearby woods, I got hooked on nettle ‰ÛÏhunting‰Û (taking care to only collect what I need, of course)!

Soap Nuts: A Natural DIY Option for Your Laundry

I went in for allergy testing because I’d been experiencing increasing amounts of sneezing and congestion. I live in Oregon’s Willamette ValleyÑthe land of pollenÑso I assumed I was developing the typical pollen-based misery that some of my friends suffer through every year. However, it turned out I wasn’t allergic to anything natural, including pollens and my pets (good news!). I discovered, however, that my symptoms were being caused by a chemical sensitivity (bad news!), and the allergist immediately pointed to my skin care, hair care, and laundry detergent as likely culprits.  (more…)

New Orleans is a special place for many reasons. It’s a hotbed for music and culture, but clearly one of its shining features is its delicious Cajun and Creole cuisine. New Orleans has countless native dishes, but I’d be hard-pressed to think of one more closely linked with this city or more celebrated than gumbo. I know vegetarian gumbo may sound like an oxymoron, but with the right organic herbs and spices, you won’t even miss those traditional proteins. Feel free to call it vegetable stew if that suits you more!

Gluten-Free Vegan Cardamom Sugar Cookies

At home, my kitchen is never lacking cardamom. I like this spice so much that I’ve got a separate hand-held spice grinder filled with just hulled cardamom (hint, if you use a clear glass vase grinder, you won’t get your cardamom confused with your black pepper). This way, I can have freshly ground cardamom goodness whenever I want! One of my favorite ways to enjoy it is in sweets, like shortbread or teacake. I adapted this recipe for my gluten-free and dairy-free friends, so we could all enjoy it together. (more…)

Lush, vibrantly hued tea plants that smell as intoxicating as they taste, grow between stands of conifers. Preserving food is so much more than extending the year’s harvest. It’s a way to connect with the practices of our ancestors. No matter what part(s) of the world your cultural lineage descends from, your relatives preserved food in one way or another. As we begin to transition into the colder months, I channel that knowledge and dream of how my pantry will evolve throughout the harvest. As the cabbages in my humble garden begin to peak, I get excited thinking of all of the different flavors of sauerkraut I can create.

Guide to Peppercorns

Believe it or not, pepper was once more valuable than gold. In fact, it was used as currency as early as 1000 B.C. This favorite spice originated in southern India but now makes an appearance on spice racks and kitchen tables all around the world. While black peppercorns may be the most commonly used, we love having a variety of peppercorns in our culinary toolbox. They add different flavors (and colors) to anything they touch!
